The History of the Praline
Praline was first created towards the end of 1649. It was during the period of the Fronde in the reign of Louis XVI, that the experienced negotiator Marshal du Plessis-Praslin was sent by Cardinal Mazarin to parley with the people of Bordeaux, who were revolting against the autocratic power of the King. But they closed the doors of the town to him! Trying to calm things down, the Marshal invited their representatives to a sumptuous dinner on 14 December 1649.
The meal had 8 courses, but as a grande finale the Marshal passed round an enormous gilded silver platter and each person used a gold spoon to taste a new sugared sweetmeat, which they thought was marvellous. The praline was born!
